You’ll get every penny if they finish the season with a profit (which they won’t). If they have a losing season (which they will), you and he will divide the earnings 50-50.

Make sure the bookie understands that you’re not attempting to con his customers; you’re just trying to make money for both of you. He intends to close regardless, and if he does it his way, he will make no money over the summer.
If you do it your way, he’ll make a lot of money this summer. Following through on that deal will, at the at least, give you and the other bookie (now a “sub-book” to you) money for a few months. When August approaches, the bookie (a lazy creature by nature) will notice that he made a lot of money for working one day a week and will recommend that you two keep the arrangement going.
You will be immensely wealthy if you do this once a year. What’s the best aspect about this deal? You’ll be able to more than pay for another clerk with the extra money you get from this sub-customers, book’s and you won’t have to work every day.
